If you’ve ever needed proof that a food truck can be more than just a business, meet Melanie Osier, owner of Oh Crepe & Waffles Food Truck.

Her truck serves crepes and waffles, sure—but what she’s really serving is proof that, no matter where you come from or how hard you’re struggling, you can build the life you want.


From Surgical Scheduler to Waffle Warrior
Before food trucks, Melanie’s world looked very different. She worked as a surgical scheduler in a doctor’s office—steady work, predictable routine, but not exactly a place where creativity or passion got to shine.
Then COVID hit.
Like so many people, Melanie lost her job. But what felt like a major setback turned out to be a turning point. She started working on another food truck and discovered something she’d never quite felt before:
She loved the work. The pace. The people. The creativity. The trucking industry didn’t just give her a job—it gave her a sense of belonging she’d been missing her whole life.
From that moment on, she knew:
“I wanted to have my own food truck.”
The “Why” Behind the Waffles

To show everyone that no matter who you are, where you come from, or how hard life feels right now, you can do anything if it’s truly what you want.
She was told it wouldn’t work.

Instead of backing down, she turned that into fuel--making this truck her mission and her passion.

Crepes, Waffles, and a Punch-in-the-Face Breakfast
Oh Crepe & Waffles specializes in exactly what the name promises--crepes and waffles—but not in a quiet, polite way.
Melanie describes her concept as the “punch in the face” her area needed when it came to dessert and breakfast. Sweet, fun, bold, and a little over-the-top.
Her menu is built for indulgence and joy.
Boston Cream Waffle – A Belgium waffle loaded with vanilla Bavarian cream and chocolate glaze that tastes just like a Boston cream donut… only bigger, crispier, and somehow even more satisfying.
She’s serious about quality too. The batters are made with locally sourced ingredients and precise measurements, so every waffle and crepe comes out with the same consistent, craveable texture. And as Melanie puts it, she follows the oldest kitchen wisdom there is:
“Like grandma always says, we bake with love.”
And you can tell.
Freedom, Creativity, and a Five-Gallon Near-Disaster
Ask Melanie her favorite part of running a truck, and the answer comes fast: freedom and creativity.
She loves being able to express herself through food—taking ideas, cravings, and customer dreams and turning them into something hot off the griddle. “I can make anything and everything,” she says, “and make any dream a possibility.”
Of course, food trucking never goes 100% according to plan.
At one campus event, the team had to move the truck every 45 minutes. During one of those moves, they took a turn a little too sharply. The fridge door flew open and a five-gallon bucket of batter came flying out.
Instead of exploding all over the floor, it landed perfectly upright in the middle of the truck. No spill. No mess. Just shock… followed by nonstop laughter.
They talked about it for hours. In this business, sometimes your biggest wins are the disasters that almost happened.
Community, Kids, and Churro Waffles
Oh Crepe & Waffles isn’t just a business parked on the edge of town; it’s become part of the community.
One of Melanie’s favorite events is the Oneida Castle Food Truck Celebration, where neighbors come out for food, music, crafters, and a sense of small-town connection. She loves being part of helping that community “come back together as a village.”
But maybe the best example of her heart for people is the reading program she ran for kids in grades K–6.
Over the summer, kids who read 10 books could bring in a completed form to the truck. They’d receive a medal and a free item as a reward. One young reader proudly told Melanie all about each book he’d read—why he chose them, what he liked, what he learned.
Then he told her the real reason he pushed himself to finish:
He just really wanted that churro waffle.
That’s the kind of memory that sticks with you. Not just because it’s sweet, but because it proves how much a food truck can matter to a community—especially its kids.

Meet Willy B
Do you remember the first time BBQ made you stop mid-bite and just smile? That’s the moment Allen Bledsoe chases every service. Friends call him Willy B (short for William), and his trailer--Willy B’s Smokehouse—is his family’s legacy in motion. He still builds tires for Bridgestone by day, then fires up the pits to feed a loyal crowd by night and weekends. Why do it? “My family—100%. I’m building something my kids can be proud of.”
The Why → The Work
Willy B’s journey started in childhood backyard cookouts and grew through years of cooking for family, co-workers, and anyone who wandered close when the smoke rolled. The final push came from his biggest fan—his wife—who said, “Go for it.” He did.

  • Signature: Slow-smoked brisket—the heart of Texas BBQ.

If there’s live music and cold beer, expect to see the black trailer and a line forming. Willy B’s loves partnering with local breweries—great atmosphere, great guests, and even better BBQ.
Moments That Matter
  • Most unexpected win: A guest once bought a whole brisket on the spot—no hesitation. That kind of trust is earned slice by slice.
  • Funniest lesson: The day the trailer jack wouldn’t move… because it wasn’t powered on. “You live and you learn,” he laughs.
Community Love
Local businesses keep inviting him back, and guests keep spreading the word. That’s the real marketing--great food + great character—and it shows up in full dining rooms and sold-out pans.
Hard-Won Wisdom
  • Biggest challenge: Balancing a full-time job with a food-truck schedule. He limits days to protect quality and family time—even when the phone won’t stop ringing.
  • Lesson learned: “Don’t make large purchases too quickly.” Smart growth > fast growth.
  • Advice to beginners: Be patient when buying your trailer; value build quality over flash.

Full-time on the trailer—with a second unit on the horizon once he finishes dialing in the first.
