When you pull up to FreshLei Made, you’re not just grabbing a quick bite—you’re stepping into a story of faith, family, and flavor. Owners Richelle and Malik Jordan credit their journey to divine inspiration: “God has ordained every step in this business venture,” Richelle shares. That purpose shines through in every dish and every interaction with their loyal community.

From Jewelry to Gourmet EggrollsBefore launching their truck, Malik spent 14 years as a certified jeweler. Now, instead of polishing gems, he’s perfecting gourmet eggrolls packed with flavor. “We wanted to bring something different to the community,” says Richelle. And different it is—their menu takes the classic eggroll and reimagines it into something unforgettable.

The Fan Favorite: Shrimp & Cheese

Ask anyone who’s visited FreshLei Made, and they’ll point to the Shrimp & Cheese Eggroll as the must-try. Stuffed with salmon, kale, shrimp, and a gooey blend of cheeses, it’s a fusion that’s as bold as it is satisfying. The couple admits they rely on special seasonings to create a flavor profile you won’t find anywhere else—though they’re keeping the exact recipe close to the vest.

More Than Food—It’s Family

For Richelle and Malik, their truck isn’t just about business. “Our favorite part is the freedom of schedule to raise our family and create opportunities,” they explain. That sense of family extends to their guests, too. At Kings Depot, their home base, customers don’t just eat—they connect. Richelle says, “It warms our hearts to serve the people and see their joy.”

Lessons From the Road

Like many food truck owners, they’ve discovered the less glamorous side of the business: “The countless amount of fees, permits, zoning, and regulations—we wish we’d known it all from the start.” Their advice to new food truck dreamers? “Do as much research as possible from food sources, mentors, and established businesses.”

Looking Ahead

FreshLei Made isn’t slowing down anytime soon. They’ve already teamed up with Poppy Putt Traveling Mini Golf for special events and have their eyes on expansion. “In five years, we see ourselves with multiple trailers to serve at a larger capacity,” Malik says.
