For Troy Hellen, the smoky scent of BBQ isn’t just a flavor—it’s a lifelong calling. After spending 35 years in retail management, Troy decided it was finally time to trade in the store aisles for smoky wood chips. His dream of running a BBQ food truck had been brewing for nearly two decades, and when the moment came, he fired it up with passion and purpose: to share incredible BBQ with the community he loves.


For Troy, BBQ is more than food—it’s tradition, creativity, and comfort. He’s been smoking meats and perfecting recipes for years, building a menu that draws crowds from all over.
The star of the show? Smoked Mac n’ Cheese. Made from scratch every single time, this gooey, smoky masterpiece has become a fan favorite.

What sets What’s Smokin’ BBQ apart?
