Meet Willy B
Do you remember the first time BBQ made you stop mid-bite and just smile? That’s the moment Allen Bledsoe chases every service. Friends call him Willy B (short for William), and his trailer--Willy B’s Smokehouse—is his family’s legacy in motion. He still builds tires for Bridgestone by day, then fires up the pits to feed a loyal crowd by night and weekends. Why do it? “My family—100%. I’m building something my kids can be proud of.”
The Why → The Work
Willy B’s journey started in childhood backyard cookouts and grew through years of cooking for family, co-workers, and anyone who wandered close when the smoke rolled. The final push came from his biggest fan—his wife—who said, “Go for it.” He did.

  • Signature: Slow-smoked brisket—the heart of Texas BBQ.
  • Fan Favorites: Chopped brisket sandwiches and brisket nachos (you’ll taste the hours on the pit).

  • Biggest challenge: Balancing a full-time job with a food-truck schedule. He limits days to protect quality and family time—even when the phone won’t stop ringing.

  • Advice to beginners: Be patient when buying your trailer; value build quality over flash.
Five-Year Vision
Full-time on the trailer—with a second unit on the horizon once he finishes dialing in the first.
